Dutch Oven Veggies – serves 4-6

1 ½ cup broccoli
1 cup baby carrots
1 cup green pepper, strips
1 cup onions, wedges
1 cup cauliflower
1 ½ cup mushrooms, quartered
1/2 stick butter
salt, pepper or seasoning mix
1 ½ cups shredded medium cheddar cheese

Cut up and mix vegetables. Put ¼ inch water in Dutch oven and add vegetables. Place slices of butter on top of veggies. Add seasoning – more than seems enough. Use a full pattern of briquettes under the Dutch oven. Once the veggies are steaming, pull at least half the coals out. Steam veggies until carrots are tender. Set oven off coals, drain off water with baster, and cover veggies with shredded cheese and put the lid back on .When the cheese is melted, serve.
