Ingredients:1 bunch romaine lettuce chopped (I use the bag kind)
1 ½ cup broccoli florets, chopped bite sized
½ cup red onion chopped
½ cup craisins
½ cup walnuts, almonds or pecans
1 pkg ramen noodles (discard seasoning packet)
2 Tbsp butter
½ cup olive oil
¼ c red wine vinegar
1/3 cup sugar
2 tsp soy sauce
Directions:Toss chopped lettuce, broccoli and onion in salad bowl. In a skillet sauté the ramen noodles and nuts in butter until golden. Toss into salad mix. To make dressing, blend olive oil, vinegar, sugar and soy with a wire whisk until well blended and sugar is dissolved. Dressing may need to be whisked before serving if it has separated. Add dressing to salad right before serving and toss to coat evenly.
