This is a dumb question, but how do you know you have water in the hot water heater? when you fill the fresh water tank does that also fill the heater ?

You need to turn the pump on and open the hot faucets to let the air bleed out

+1 for LunaPod
The water heater fills from the bottom with the line out on the top. When water is flowing from the hot tap, the water heater tank is full.

If you are hooked to city water you don't have to turn on your pump, just open the hot water faucet in the sink unitl it stops sputtering. I recommend doing this at home before dry camping or you will use 6 gallons of your fresh water tank just filling the water heater.
