I have to try that brining, I have seen it done on the cooking channel, I have a Big Green Egg, I am telling you guys this is the best cooking smoker system I have ever seen, I can keep the temp from just below 200 deg/f to over 600, I did a Beef Brisket last winter when the outside temp was about 25, the Egg stayed at 215 d/f, I put the brisket on at 9am and took it off at 5pm, never opened the lid, the temp at 5pm was 215 d/f. What a Brisket, Bam

We have the Brinkman 600# cast iron smoker.  Have done some fabulous ribs and tried a brisket also.  Fabulous.  Didn't get to smoke anything this summer as we were doing a lot of camping.  But, next year.  If there are enough of us crazies, with smokers, possibly we could have a separate area for smoking recipes.  Might also want to mention the fabulous website, www.Amazingribs.com.    Safe Travels.
