My three-way fridge has been having trouble lighting the pilot when on propane mode. I don't even know where to start troubleshooting this. I just got a refill of propane and the heater is lighting without issue. Any ideas?

Try the refrigerator using electric power.  If that works, the problem is most likely trash in the burner or orifice. I had the same issue and we are leaving Wednesday for a 3 month trip out west!. I just cleaned my total burner assembly.  There are a lot of You tube videos that show exactly what to do and how to do it.  Search for RV refrigerator maintenance or repairs. I watched 4 or 5 and did it.  It is not complicated or hard. Took about 35 minutes and used basic hand tools-3/8", 7/16", 1/2" wrenches, phillips screwdriver, sand paper, goof off or other solvent and compressed air.  Ended with a clean blue flame that lit the second click of the ignitor.

Try it, there aren't many other things that can go wrong. Famous last words!!

Ours wouldn't light last trip for a while, too.  Furnace and stove worked so we took the back cover off of the fridge to see if we could clean anything out.  Nothing major there so I just pushed the gas fault button (right hand side, with the triangle on it I think) on the fridge and turned it off and on and it finally lit.  Good luck!  We also had an issue with the fridge alarm coming on when the humidity was too high where there was too much condensation in the fridge and a circuit got crossed.  We wiped it out and re-arranged everything to maximize airflow and it solved that problem.  Next time we'll use the dryer after having showers so we don't have wet towels inside ;-)
