This is probably on this site somewhere, but I thought just in case it isn't, here it is.
Easy as can be.
 In a large Zip-lock freezer bag, add 2 or 3 eggs, any extras such as cheese, onions, bacon pieces, cubed ham, etc.  close the bag, squeeze bag to break egg yolks and mixed in ingredients, and carefully drop in a pot of boiling water (make sure bag does not touch the inside of the pot) for 13 minutes, and enjoy. 
I've never had a fluffier omelet. Our kiddo's enjoyed these because they can add what they want in the bags for their individual tastes.

My wife does the same thing with the microwave but this is a great idea if you are boondocking and don't have access to the power needed to run it.
