With ODP valves, you can only fill portable LP tanks to 85% of their stated weight.  17lbs for a 20lb tank, and about 25.5lbs for a 30lb tank.  I chose to install two 20lb tanks because each are a little lighter in weight, they aren't as tall, and I wanted to put in a different (dual) regulator as the OEM one pinged loudly.  The dual smaller tanks also give me 34lbs total rather than the 25lbs from a single 30 tank. When one tank is empty I can go and refill it while still having LP from the other.

A lot depends on your "style" or method of camping, regarding your propane consumption.  For example, I just filled both of my tanks before my 7 days out a couple of weeks ago.  I bought my camper in late March of 2010 and this was the first fill.  So, in nearly 2 full seasons of camping, I had used one and 1/2 tanks of propane.  I have 2 - 20lbs tanks.
 
In my case, 2 - 30 lbs tanks would be way overkill, as I could actually get by one one 20lbs (most of the time); just filling at the beginning of the season.  Two 20lbs tanks are more than I need, but nice to have.
 
With that said, most of my camping is at State Parks; most of the time with electric available.  I just don't use much propane.  I don't cook inside, run the water heater & fridge on electric and, use a small electric heater.
 
I am fortunate to have a propane company a couple of mile up the road, so refilling is not a big issue.  However, in a pinch, there are several places (around the Indy area) where one can simply swap an empty 20lbs tank for a full one (gas stations, super markets, home improvement stores, etc.).  All things considered, two 20lbs tanks fit well in my situation.
 
During my week out (all with no hook ups), I did not empty one tank.

I will be ordering an Rpod in the spring and I will have the dealer equip it with 2, 20 lb or 5 gallon tanks with an auto cutover.  When the first tank empties, the regulator will automatically switch to the second tank without interruption.  The regulator we had on a camper years ago even had a red flag appear when the first tank was empty, alerting us to have the first refilled.  A cheap investment when your camping and you run out of fuel for your heater in the middle of the night.  Just a suggestion.

Bring along a spare tank and if you need it you will have it and if you dont leave it at home next time. I always have a backup tank at home after ruining a good meal when we had company over a few years back. I dont worry about running out anymore.

Even in cold weather one 20 pound tank will last you 3 days with the heater set warm, and the fridge on propane mode. Some add a 2nd 20 pound tank to get through a cold week, some add a 30 pound tank and are more sparing with the heat to get through a week, some add two of them.

Here comes another Newbie question, I think our 172 has a 20 lb propane cylinder, this said, the weight of the tank minus the actual gas is like 9 lbs or so, why does my gas grill have a 30 lb cylinder and can you put a single larger tank on, or is it better to put 2 smaller ones on, Bear with me, I am just trying to learn before we get out and get caught "with our britches down" thanks for any help, I think short term we are going to be doing 1 to 3 day adventures and the one cylinder should not be a problem in warmer weather, but just thinking. Embarrassed
