1 T butter 1 medium sweet onion - chopped 6 small or 2 large potatoes - cubed appx 2 c liquid - can be chicken or fish stock or water (enough to completely cover potatoes) 1 bottle clam juice (if using all chicken stock or water) 1 1/2 lb boneless, skinless firm fish - chunked 8 large shrimp - cleaned with tail on 8 sea scallops - muscle removed 1 can high quality chopped clams w/juice 1 can evaporated milk Garnish with paprika, pepper, parsley (if desired) and a pat of butter |

Maybe you could call this part of the SEA FOOD DIET. Plus anything made while camping is good for you and has all the right stuff in it.

Well, I was on the SEE FOOD diet... Holiday meals don't have any calories in them either!

There are some very good Weight Watchers Receipies. I'll have to dig some of those up and see how they would work while camping. (SHHHH don't tell my family that some of the dinners they enjoy are Weight Watchers)

We've started a new diet too. Must be something about starting a new year.
All we are trying to do is treat sugar (including those hidden sugars) and processed white flours (bread and pasta) as if they were poison. Which some people think they are! Fortunately we live where fresh fruit and vegetables are plentiful year round. I also bake a lot so can make whole grain breads when we need them. Gotta limit even those too. Sigh. And fat, and . . . . . . and . . . . |

Very hard to stay away from most of that in today's processed food society. We are trying to do more veggies, too. Personally I'm keeping my calorie count below 2000 and my fat grams as low as possible. So far so good.
