Is there an elegant way to add an inverter to my 180 so I can watch the TV and charge a phone from the 120V outlets off battery power? Maybe a converter that becomes an inverter when off shore power?

Elegance is in the eye of the beholder. I mounted mine under the dinette since that's where I worked. The inverter ran the second monitor and re-charged the laptop. That's it.. 
Personally, I have found the tv not to be useful at all. Barely gets any stations and don't like size nor location of mount, I took mine out. I use my laptop for movies and such.

There are 12V TVs you could probably get for not a lot more than a decent inverter. That, and there are bunches of USB ports that can be run on 12V as well. How elegant is that?

+2 on the 12V tv and USB ports.

Much more elegant than an inverter and more efficient. Get a dual voltage TV, they’re not expensive. By the time you recover a few bucks on Craigslist for the old TV I think you’re ahead cost wise vs an inverter.

As for watching stuff, get an Hdmi adapter for your smart device and you can either stream or play recorded video to the tv, while using Bluetooth to connect to the trailer audio system.

I have cables for connecting phone or tablet and laptop to HDMI and audio from TV to "stereo" (and I thought Blose was bad...).  

I did not know I could buy 110/12V TVs, but Amazon is rife with them.  Anybody know what the load limit on the TV mount is?

The mounts usually state the load they will hold.  Your bigger problem is how much weight will the point of attachment to the trailer hold.  If you don't get a structural member as backing, you may want to add a base plate attached to structural parts.

Exactly. I have the OEM TV and mount. I have seen in some places the framing is wood and is aluminum in others. What is used for "studs" in the walls? I want to mount a mirror over the bathroom sink, too.

The outside walls have 1 inch aluminum box tubing, but not much of it. Take a look at this construction video:

I found an acrylic/Mylar mirror on Amazon that will work nicely and I figure the luan wall will hold the screws it needs, especially if I add some double sided tape. .

I have mounted two of those mirrors in the wet bath of a 179 with just command strips and have had no problems, their really light.
