Got our 179 winterized and tucked in for the long winter. Now it is time to start the winter hobbies, mine are trapping and ice fishing. Also following the Boston Bruins but lately that can be painfulOuch

Still got  a couple pounds each of my last batch of country and Italian sausage. I was at the http://www.readingterminalmarket.org - Reading Terminal Market in Philly last week salivated over http://martinssausage.com/martins_specialty_sausages_at_reading_terminal_market.htm - Martin's sausage .

My current "hobby" is moving and stacking more firewood from piles to garage. Always try an keep a week or two supply in garage.

Gracie knows to stay well away from the grinder.  Just came back from Safeway and cleaned them out of pork butts.  Cut them all into grinder sized pieces and then put them to bed in the freezer.  Tomorrow will make some Chorizo and then on to some Andouille.  Safe Travels.

Hopefully it tastes good, also.  Too cold to smoke so will just put them on the grill.  I made some Bratwurst last week.  Gotta do something, till spring arrives.  Safe Travels.

Wow Bob. That sounds great. Especially the Andouille. Curious to hear how that works out without smoking. You definitely inspired me to diversify my sausage repertoire! I might even ask for a small gas smoker for Christmas.

I love my http://www.smokenator.com - Smokenator 1000 , but it does take a lot of attention when (hot) smoking for more than an hour or two like a pastrami or brisket or butt. You got a box smoker? The http://www.amazon.com/Masterbuilt-20051311-2-Door-Propane-Smoker/dp/B004W4NDPY/ - Masterbuilt gets good reviews for an entry level smoker.

Speaking of the Twilight Zone, I wonder how many who are reading this board have seen or even know what the Twilight Zone was.  Showing our age.  I just recently got into making sausage.  Have been smoking for years with a Brinkman Cimarron cast iron smoker.  Weighs about 600#.  Non of these light weights for me.  Took a class on sausage making and then tried my hand.  Started with a Kitchen Aid, but not totally happy.  Invested in a LEM grinder which also doubles as a stuffer.  Been having fun, and haven't killed anyone yet.  So the quest continues on making sausage.  If interested, I could suggest a few places that just have sausage recipes and techniques.  Great hobby, until summer.  Safe Travels.  P.S. Never had deer sausages.  Are they gamey?

Bob, I'd love to see your links/recipes! You're way ahead of me!

Some of my favorites:

1) http://amazingribs.com/ - Amazing Ribs  Meathead's http://amazingribs.com/recipes/beef/close_to_katzs_home_made_pastrami.html - Pastrami recipe is...amazing!

2) http://www.foodnetwork.com/recipes/alton-brown/pulled-pork-recipe.html - Alton Brown's Pork Butt  Done this one a lot. Always great.

3) http://www.silverspider.com/2008/smoked-chicken-recipe/ - Pretty simple smoked chicken  Usually do this with a pork butt when I need a lot of food.

4) http://www.foodnetwork.com/recipes/alton-brown/smoked-salmon-recipe.html - Alton Brown's smoked salmon  Only done this once, but it was worth the effort. It's tough for me to keep my smoker that low, though.

5) Italian sausage. Simple and traditional. Just salt, pepper and fennel. Experimented till I got it right. Still using Kitchen Aid grinder. Stuffer fails so I just make balls and patties.

6) Breakfast (country) sausage. Experimented with salt, black pepper, sage, marjoram, savory, ground ginger, dark brown sugar and a pinch of cloves. Finally got it right.

OK, now I gotta go raid the fridge!!! Smile

I'm really tempted to make Meatheads pastrami.  Will have to head over to Costco and pick up a brisket and start the journey.  Kinda starved up here in Oregon for REAL east coast pastrami.  I think you mentioned that you were at Reading Terminal Market recently.  Was just back in Philly a month ago and had lunch there.  Amazing still after all these years.  Probably attempt to corn a beef after the holidays.  Safe Travels.

Going to be a long winter, so we are going to take our two grandchildren down to Disney World for 8 days to start the winter. Gonna fly though, the pod will have to miss this trip.
We have taken the pod to Fort Wilderness twice before some great camping memories there.

These are the landlocked salmon, we have no open season for the Atlantic salmon. Though they do come up the Connecticut river.
